not sure how similar it is on a MAc but in windows you would double click the Teamviewer icon on the desktop.
in the window that appear look near the top left for the word "EXTRAS" and click on it, choose options form the drop down.
In the first window that appears under Important Options for working with Teamviewer" UN-CHECK the box that says "Start Teamviewer with .."
Click "OK" at the bottom of the window.
Close Teamviewer and restart the computer.
Now, any time you WANT Teamviewer to run, you just have to double click the Teamviewer icon to start it.

Teamviewer runs as a service in OSX
Applications » Utilities » Activity Monitor and select All Processes.

To remove, google some things like 'remove mac OSX process' to get some hints.
The process is loaded in one of a few directories...

You could also simply remove the saved password, then no-one can connect unless they happen to know today's random password

I'm a few weeks late on this, but isn't it pretty obvious? For a Mac, under TeamViewer "Options" {pull down to Preferences to show Options), in the "General" tab that appears, just uncheck "Start TeamViewer with System".
