This actually kind of involves both Mac and Windows, but oh well. I will try to explain the set-up I have here.

So recently I was gifted a new Mac computer, and previously have been using a Windows computer for about a year now.
I wanted to use both Mac and Windows at the same time because my Windows computer had software that can only be 'Windows-run'.
So I installed TeamViewer on both machines to remotely connect to my Windows from my Mac.
Initially, I had my monitor plugged in to my Windows machine at the time I was testing out the remote connection.
The monitor was 1920x1080 so this was also the resolution displayed on the Mac when I opened the connection.
However, I wanted to save some desk space as I did not want two large monitors on my desk.
So the plan was to just hit the 'On' button on my Windows and just connect straight through with the Mac (I have setup my Windows to ignore the lock screen and login sequence too).
But what ended up happening the next time I booted up my Mac and Windows machine, when connecting to the Windows, the resolution dropped from 1920x1080 to 1024x768.

I understand this happened because I unplugged the monitor from the PC, but is there anyway to increase the resolution above 1024x768 by default without the assistance of a monitor?

The reason I ask is because I use a piece of software called FL Studio, which has a complex interface and I have always needed a larger resolution to space things out on it a lot more.
